The Wine
At the heart of our hand crafted wines is the time we spend in the vineyard each season to produces the highest quality grapes.
The resultant wine displays peppery overtones and a palate showing characteristics of dark fruit and a fine tannin structure
Traditional winemaking techniques were utilised to make our single estate Shiraz consisting of hand picking, extended skin contact, use of a basket press and wild yeast fermentation in select French Barrels
Winemaking Notes
There is such a balance between sunlight onto the vine and the right balance of leaf to bunch ratio when growing in a Cool Climate such as the Mornington Peninsula. So much of the winemaking in this instance was therefore done in the vineyard to ensure the environment produced the peppery characters that we feel are so elegant and special and unique to Cool Climate Shiraz.
