The Wine
To create this tribute wine we have merged Italian white varieties Fiano and Moscato Giallo grown in our family vineyard for generations. The resultant union highlights the earthy aromas and elegant mouth feel they bring to light each vintage.

Winemaking Notes
The 2021 Nicoletta was crafted by using traditional family techniques, with a focus on achieving optimal ripeness. The grapes were carefully hand-harvested once the skins and seeds exhibited the desired flavour and tannin qualities. Following destemming, the must was left to cold soak on the skins for 12 hours before undergoing an extended pressing period. The juice was then transferred into seasoned French oak barrels and fermented using indigenous yeast. After malolactic fermentation, the wine was kept on lees until it was racked prior to bottling. The wine was bottled naturally, without fining or filtering, using gravity.
